Eat JUST Unveils Plant-Based Sous Vide Egg Bites

Eat JUST, the food tech company that pioneered the plant-based egg movement, announced it will be debuting a new product under its JUST Egg line. The new plant-based egg bites, JUST Egg Sous Vide, will be rolled out this March in select US grocery stores, giving consumers the chance to try the company’s newest heat-and-eat offering.

The vegan-friendly egg alternative was developed and manufactured in collaboration with American sous vide specialist Cuisine Solutions. Meaning “under vacuum” in French, the sous vide cooking method involves vacuum-sealing and slow cooking food in circulated and temperature-controlled water. The method is widely used for cooking various meats to precise temperatures while sealing in juices. Now, Eat JUST is taking advantage of sous vide with is pre-baked frozen egg bites.

“The Cuisine Solutions team is the best in the world at what they do,” said Josh Tetrick, co-founder and CEO of Eat JUST in a press release. “We partnered with them because of their unparalleled expertise and leadership in the sous vide industry and their commitment to make our food system even better. We’re excited for consumers to taste what we’ve been working on.”

Inspired by regional cuisines and whole plants, each of the four flavors is named after the countries from which they drew inspiration. The flavors include “America,” made with roasted potato, dill, chives, red bell pepper and black pepper; “India,” made with broccoli, cauliflower, coconut milk and lemongrass; as well as Japanese- and Mexican-inspired egg bites.

The mung bean-based bites are derived from the same recipe as JUST Eggs, the liquid egg product that garnered massive success around the world. Not only are the egg bites free of meat and dairy, but they are also GMO-free, cholesterol-free and contain a similar amount of protein as their animal-based counterparts at nine to 13 grams of protein, depending on the flavor. JUST Egg Sous Vide bites will be sold in boxes of four and can be heated up in the oven, toaster or microwave.

To mark the unveiling of its new product, Eat JUST and Cuisine Solutions hosted a virtual panel discussion on January 26, a day before International Sous Vide Day, led by the company’s chief scientist Dr. Bruno Goussalt.

While it is unclear whether the new product will be released to international markets, the company is certainly not limiting its spread to the US. Eat JUST intends to make Singapore a major global manufacturing hub for its plant-based eggs and cultured meat products. Singapore also became home to the world’s first commercially-available cultured meat product developed by Eat JUST.

Meanwhile, in China, Eat JUST has been introduced on the menu at more than 500 Dicos locations, a local rival to McDonald’s and KFC. Consumers will find JUST Eggs in Dicos’ breakfast menu, including its breakfast burgers, bagel sandwiches and Western-style breakfast plates. Perhaps the sous vide bites will be the next plant-based menu item if and when the company expands the product to other markets.

For now, the launch of the new product is likely to be welcomed by American consumers, who have been increasingly turning to plant-based foods during the COVID-19 pandemic.
