Using Food Processing Machinery for Sous Vide Cooking to Deliver a Quality Product

The Lyco Rotary Drum Sous Vide system is a food processing machinery that can be used for cooking and cooling proteins, vegetables and starch products. Its Rotary Drum continuous design ensures first in/first out of the product. The packaged product is fully submerged in water for both cooking and cooling. This system controls the precise cook and cool times and gently agitates product packages to ensure uniform treatment. The cooker water temperature is maintained within 2°F of the set point and chilled water is recirculated through the cooler in a counter-flow direction so the product can be cooled to 40°F.

The sous vide processing offers tender, tasty products with well-preserved flavour, nutrients and moisture. In addition, product colour and texture are retained within a vacuum-sealed package. This type of food processing provides higher yields overall. The Lyco Sous Vide system’s fast heat transfer ensures a small footprint. It is fully automated, repeatable and can process a wide range of package sizes, weights and capacities.

The company offers a test kitchen with a Rotary Drum Simulator to assist customers by quickly and accurately developing a precise process of cooking and cooling using the packaged sous vide product.
